In 1259, the castle of Moncassin was a fortified feudal residence with a farm and a wine cellar. It ensured, within its walls, a refuge for neighboring peasants during insecure periods, by allowing them to live in autarky.
From the 12th century, it was the seat of a very powerful coseigneury. The fortress belongs succevely to large families such as the Lords of Foix, of Pins, of Lupiac, of Montlezun and the Albret families. Moncassin's Lords were well known for their belligerence.
This fortified castle was remodeled in 1554, then rebuilt in 1865 by the families of Sigalas Lur-Saluces, following a fire. It has since in the style of the Renaissance. In 1965, the Delmotte family took over the destiny of the castle and the cellar with the desire to devote themselves to making the best use of the land and the vines, to preserve all their nobility and to pass on its history and the taste for tradition to future generations.
The vineyard covers 11 and a half hectares, it harmoniously surrounds the castle and its park.
Its terroir lends itself perfectly to the cultivation of vines thanks to its ideally oriented slopes and its clay-gravelly soils planted with noble grape varieties: Cabernet Sauvignon, Cabernet Franc, Merlot for the reds, Sauvignon and Sémillon for the whites.
For greater respect for the environment and the guarantee of quality products, production is controlled and reasoned, in particular through the permanent and manual monitoring of the vines.

The cellar allows, by its singularity, the wine making essentially by natural gravity also called “écoulage”. The wines are made using a combination of modern technology and traditional techniques, including the process of thermoregulation.
An arched cellar hosts the ageing casks that contribute to guarantee excellent and long lasting wines. These methods offer a variety of blended wines to drink young or to keep over time.
